The recipe below is my attempt at coming up with a tolerable way to get some coconut oil in without having to eat it by the nasty spoonful. It didn't turn out too terribly bad. :) Much better than eating a spoon of the stuff right out of the jar, but then, I'm a wuss.
Oct's Coconut oil Biscuits
* Pre-heat oven to 475 *
- 3 TBSP extra virgin coconut oil
- 2 TBSP butter
- 1 egg
- 1/8 cup sugar free Davinci French Vanilla Syrup
- 2 cups of Carbquik
Melt the coconut oil in the microwave or on stovetop until it starts to soften, add butter and heat until all is liquid. In a large bowl, beat egg together with melted coconut oil and butter and SF Davinci syrup. Slowly add 1 cup of Carbquik at a time, mixing well between each cup. Form into 8 mounds. Bake for 10-12 minutes. Let cool. They should be crumbly on the outside and moist on the inside. Yum - it's LC and a tasty way to get in some of that healthful coconut oil.
Makes 8 biscuits at less than 2 carbs each.
(0 for coconut oil, 0 for butter, .6 for egg, 0 for SF syrup, 12 for Carbquik)
