We're trying not to keep our normal routine during this staycation so that it will actually feel like vacation. I'm not even eating my normal meals but rather have made something a little more fancy for yesterday and today (still 4HB and low carb). Walnut encrusted chicken! And wow is it good. I followed the recipe author's suggestion to brine the chicken breasts for an hour before encrusting with chopped walnuts, minced garlic and rosemary (thyme because I had no rosemary). The last step was to drizzle with walnut oil and bake for 30 minutes. The result was moist and flavorful walnut chicken. Absolutely easy and worth trying. Very low carb too. They are less than 1 carb per piece. The total net carbs for the chopped walnuts was 10, the cloves of garlic were 4 carbs, and there are more than 16 pieces of chicken. No carbs in the walnut oil and none in the chicken breasts of course.
